Super Simple Granola.

I absolutely love this homemade granola. I adapted the recipe from the one my mamaw uses. Best of all it is cheap and super easy to make! This recipe makes quite a bit but I go through it pretty fast. It probably doesn't help that some days I eat three bowls of it... I have also put half in the freezer to keep myself from eating it too quickly.


Ingredients:
{1 container} old fashioned oats
{1/4 cup} brown sugar
{1/3 cup} honey
{2 cups} shredded coconut
{1-2 cups} dried fruit - I used dried cranberries
{1-2 cups} nuts - I used almonds and pecans this time

Stir together oats, brown sugar, honey, and coconut:



Spread out on cookie sheets (I cook two seperate batches with two cookie sheets at
 a time in the oven). Cook at 350 degrees for 10-12 minutes, stirring once halfway through (I also switch the racks they are on when I put them back in):

 Next, mix in your nuts and dried fruit then let cool completely:


And enjoy! I typically eat it over yogurt or as cereal.

After it cooks, you can add whatever you like based on your tastes and what you have. I usually do almonds and dried cranberries in mine but I have also experimented with some other ingredients. Here are a few ideas: raisins, dried cherries, dried apricots, cashews, and sunflower seeds. You can also add wheat germ and/or flax seed to give it a little health boost (I am just not a fan of fine "crumbs" at the bottom of my cereal bowl).
