Weekly meals

After a little hiatus from the meal planning world I'm back with a new menu for this week! What's your plan for the week?


  • Oven baked tacos & mexican rice
  • Roast chicken thighs - I have been roasting chicken thighs more and more lately. They are inexpensive and SO delicious when roasted. I was inspired by a recipe from the Smitten Kitchen cookbook for roast chicken. All I did was: preheat the oven to 425. Place fingerling potatoes in the bottom of a roasting dish/cast iron skillet and drizzle with a little olive oil. Cut the fat off the thighs and season well with salt. Place thighs on top of the potatoes in the skillet and roast for 30-35 min or until a meat thermometer reads 165. Such a delicious meal, please try!
