Sweet Potato Rounds

I have a slight obsession with sweet potatoes. We eat them about once a week and I love finding new ways to prepare them. This is probably my favorite way to eat them. Enjoy as a side with burgers, salads, casseroles, and more!

Sweet Potato Rounds:
preheat oven to 400

  • 1 large sweet potato - sliced thin
  • olive oil (or coconut oil)
  • salt and pepper
Place the potato slices in a single layer on a foiled lined baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and bake at 400 degrees for 12-15 minutes until crispy around the edges.
